Spicy Cashew Chicken Stir Fry

Ingredients
  

  • 2/3 cup spicy stir fry sauce
  • 2.5 pounds chicken thighs cubed
  • 1/2 cup cashews
  • 1 small red pepper diced
  • 2 small yellow zucchini diced
  • 1 large green zucchini diced

Instructions
 

  • Marinate chicken in 1/3 cup stir fry sauce for 20 minutes.
  • Add chicken to wok (throw away extra sauce from chicken mixture) and saute until chicken is almost done. Around 10 minutes.
  • Add cashews, pepper, zucchini and remaining marinade.
  • Cover and simmer for another 10 minutes (or until chicken is done), stirring occasionally.
  • Serve warm!

Notes

I threw in some green onions at the last minute, but that is completely optional!
