Tex Mex Chicken

- 2 large boneless skinless chicken breasts cut in half lengthwise.
- 2 teaspoons taco seasoning
- ½ onion sliced
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 cup Rotel drained
- 1 cup fiesta blend shredded cheese
- ¼ cup chopped green onions
- Salt and pepper to taste
Preheat the oven to 350 degrees.
Season the chicken with the taco seasoning.
Lay down four long sheets of aluminum foil on a flat surface.
Place ¼ of the Rotel in the center of each piece of aluminum foil.
Top with ¼ of the peppers and onions, and season with salt and pepper to taste if desired.
Add a piece of the seasoned chicken to the top of each piece of aluminum foil and sprinkle each piece with ¼ of the cheese.
Roll up the longest two ends of the tin foil, and then fold in the sides to form a secure packet.
Place the packets on a baking sheet and bake for 25 minutes, or until the chicken is completely cooked through.
Garnish with green onions and your favorite toppings before serving.
