Ingredients
  

  • 2 large boneless skinless chicken breasts cut in half lengthwise.
  • 2 teaspoons taco seasoning
  • ½ onion sliced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 cup Rotel drained
  • 1 cup fiesta blend shredded cheese
  • ¼ cup chopped green onions
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 350 degrees.  
  • Season the chicken with the taco seasoning.  
  • Lay down four long sheets of aluminum foil on a flat surface.  
  • Place ¼ of the Rotel in the center of each piece of aluminum foil.  
  • Top with ¼ of the peppers and onions, and season with salt and pepper to taste if desired.  
  • Add a piece of the seasoned chicken to the top of each piece of aluminum foil and sprinkle each piece with ¼ of the cheese.  
  • Roll up the longest two ends of the tin foil, and then fold in the sides to form a secure packet.  
  • Place the packets on a baking sheet and bake for 25 minutes, or until the chicken is completely cooked through.  
  • Garnish with green onions and your favorite toppings before serving.
