  • Line an 8’’ square baking dish with parchment paper.
  • Add all the ingredients for the crust to a medium bowl. Stir until combined.
  • Transfer the crust mixture into the prepared baking dish and press it down evenly. Place in the refrigerator while you prepare the filling.
  • Add the filling ingredients except the sour cream to a medium bowl. Use an electric mixer to mix.
  • Add the sour cream. Continue mixing until smooth.
  • Pour the filling on top of the crust, using a rubber spatula to spread it evenly. Place in the refrigerator for at least 4 hours to allow the cheesecake to set.
  • Once the cheesecake has chilled, add the topping ingredients to a saucepan and heat over medium heat until berries turn into a light jam. Add sweetener if desired.
  • Pour the jam over the cheesecake and serve immediately or refrigerate.
