Key Lime Pie

This keto key lime pie has all the tang you'd expect from a key lime pie. The crust is a toasted pecan "graham cracker" crust that really brings home the flavor.

Ingredients
  

Filling

  • 2 1/3 cups heavy whipping cream
  • 6 tablespoons butter
  • 1/4 cup low carb powdered sweetener
  • 8 drops liquid stevia
  • 2 teaspoons vanilla extract
  • 1/2 cup fresh lime juice
  • 8 oz mascarpone cheese
  • 1 tablespoon KEY LIME zest

Topping (optional)

Instructions
 

Pie Crust

  • Make pie crust according to instructions and set aisde.

Filling

  • Add heavy whipping cream, monkfruit, butter and stevia to a large saucepan.
  • Heat to a boil and then reduce to a simmer.
  • Simmer, stirring often, for 25 minutes or until thickened. IT WILL THICKEN! Just be patient and make sure to keep stirring.
  • Remove from heat and add vanilla, lime juice, mascarpone and lime zest. Mix well.
  • Pour into cooled pie crust.
  • Let sit on the counter for 30 minutes to cool.
  • Then transfer to the refrigerator for at least 6 hours to set.

Topping (optional)

  • Add heavy whipping cream, monkfruit and vanilla to a small bowl.
  • Using hand beaters, beat until soft peak form.
  • Add to prepared pie.
