Keto Panna Cotta

Ingredients
  

  • 1 envelope unflavored gelatin
  • 2 tbsp cold water
  • 1/3 cup low carb granular sweetener
  • 2 cup heavy whipping cream
  • 1 cup half and half
  • 2 teaspoons vanilla extract

Instructions
 

  • Add water and gelatin to a saucepan and heat until gelatin has dissolved (about 1 minute).
  • Meanwhile, in a separate saucepan, bring sweetener, half and half, heavy whipping cream, and vanilla to a boil, stirring often.
  • Once boiling, add gelatin mixture and combine well.
  • Pour mixture into 8 ramekins or other dessert cups.
  • Let cool for 15-20 minutes on the counter. Place in the fridge for at least 5 hours to set.
  • Serve on its own or with sauce.
