For the ice cream

14 oz. cans of full fat coconut milk

low carb powdered sugar substitute

vanilla extract
Pinch
of salt

xanthan gum
For the cookie dough

almond flour

cup
keto Chocolate chips chopped into pieces
you can use a food processor

melted

Swerve confectioner sugar substitute
Instructions
Add the coconut milk, Swerve confectioners sugar substitute, vanilla and salt into a mixing bowl, and blend for 1 minute.
Sprinkle the xanthan gum evenly over the mixture, and blend until smooth and thickened.
Pour the mixture into a loaf pan.
Place the cookie dough ingredients into a mixing bowl and stir until well combined.
Form the cookie dough mixture into small balls, and place into the ice cream mixture in the loaf pan.
Freeze the ice cream until firm, and then serve.
