  • Add the coconut milk, Swerve confectioners sugar substitute, vanilla and salt into a mixing bowl, and blend for 1 minute.
  • Sprinkle the xanthan gum evenly over the mixture, and blend until smooth and thickened.
  • Pour the mixture into a loaf pan.
  • Place the cookie dough ingredients into a mixing bowl and stir until well combined.
  • Form the cookie dough mixture into small balls, and place into the ice cream mixture in the loaf pan.
  • Freeze the ice cream until firm, and then serve.
