For the crumble layer

  • Add the almond flour, melted butter and sweetener to a mixing bowl and stir until the ingredients form a crumb mixture.
  • Place 1/8 of the crumb mixture into the bottom of each of the 8 shot glasses.

For the cheesecake layer

  • Blend together the creamy cheese, heavy whipping cream, sweetener and vanilla in a mixing bowl until light and fluffy.
  • Pipe or scoop the cheesecake mixture into the shot glasses.
  • Top with blueberries and lemon zest
  • Serve!
