vanilla extract

finely chopped pecans

unsweetened coconut flakes
Instructions
In a mixing bowl, combine the cream cheese, carrots, Swerve, vanilla, cinnamon and nutmeg until well combined.
Mix together the pecans and coconut flakes in a shallow bowl.
Wet your hands slightly, and form the carrot cream cheese mixture into 8 evenly sized balls.
Roll each ball into the pecan and coconut flake mixture until coated well on the outside.
Place each carrot cake bite onto a parchment lined baking sheet, and chill until hardened before serving.
