Ingredients
  

  • 4 ounces cream cheese softened
  • ½ cup shredded carrots
  • ¼ cup low carb powdered sugar substitute
  • 1 teaspoons vanilla extract
  • ½ teaspoon cinnamon
  • Pinch of nutmeg
  • cup finely chopped pecans
  • cup unsweetened coconut flakes

Instructions
 

  • In a mixing bowl, combine the cream cheese, carrots, Swerve, vanilla, cinnamon and nutmeg until well combined.
  • Mix together the pecans and coconut flakes in a shallow bowl.
  • Wet your hands slightly, and form the carrot cream cheese mixture into 8 evenly sized balls.
  • Roll each ball into the pecan and coconut flake mixture until coated well on the outside.
  • Place each carrot cake bite onto a parchment lined baking sheet, and chill until hardened before serving.
