Keto Biscuits and Gravy

Ingredients
  

Biscuits

  • 2 1/2 cups almond flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon baking soda
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons fresh chives optional
  • 2 eggs beaten
  • 1/4 cup cold butter unsalted and cut into chunks

Gravy

  • 2 cups beef bone broth
  • 2 tablespoons butter
  • 1 1/2 teaspoons medium ground pepper not coarse, not fine
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon Italian Seasoning
  • 1/4 cup heavy whipping cream
  • 1 teaspoon xanthan gum
  • optional - for sausage gravy, see post above

Instructions
 

Biscuits

  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  • In a large bowl, add almond flour, xanthan gum, sea salt, garlic powder and baking soda. Combine well.
  • To the large bowl, add cheddar cheese, chives, and eggs. Mix well. A wooden spatula or your hands work best.
  • Add in the cold butter chunks and use your hands to combine. Trust me, its the best way!
  • Divide into 12 balls and place on the prepared baking sheet.
  • Flatten the dough just a bit then bake for 22 minutes.
  • Meanwhile, prepare gravy.

Gravy

  • Add bone broth, butter, pepper, garlic powder, Italian Seasoning to a medium saucepan. Heat over medium heat to melt butter.
  • When the butter is melted, add heavy whipping cream and xanthan gum and briskly whisk until it reaches a soft boil and begins to thick. About 3-5 minutes. It is ok if chunks form initially, the whisking will take care of that.
  • Turn heat down to simmer and continue to simmer for 10 minutes, stirring often.
  • Serve gravy over biscuits and enjoy!
