Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
In a large bowl, add almond flour, xanthan gum, sea salt, garlic powder and baking soda. Combine well.
To the large bowl, add cheddar cheese, chives, and eggs. Mix well. A wooden spatula or your hands work best.
Add in the cold butter chunks and use your hands to combine. Trust me, its the best way!
Divide into 12 balls and place on the prepared baking sheet.
Flatten the dough just a bit then bake for 22 minutes.
Meanwhile, prepare gravy.
