Hemp and Fudge Paleo Brownies (Low Carb)

With these skillet Paleo Brownies, you get the best of both brownie worlds since they get perfectly crunchy on the outside while staying fudgy in the middle.

Ingredients
  

Hemp Butter

  • 1 cup hemp seeds
  • 3 tablespoons melted coconut oil
  • 2 tablespoons cocoa powder
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract

Brownie

  • 1 egg
  • 3 tablespoons almond flour
  • 2-3 tablespoons honey depending on your tastes
  • 1 tablespoon cocoa powder
  • 1 teaspoon paleo baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions
 

Hemp Butter

  • Start by placing the hemp seeds in a high speed blender or food processor and blending until the oils start to release and become creamy, about 3 minutes.
  • Add in the remaining ingredients and blend until it resembles the consistency of nut butter.

Brownie

  • Preheat the oven to 375° F.
  • Place the hemp butter in a medium bowl and stir in all brownie ingredients.
  • Taste for sweetness and add a bit more than the additional 2 tablespoons if desired.
  • Pour the batter into a 6 inch cast iron skillet and bake for 20-25 minutes or until a toothpick comes out clean when inserted into the middle.
  • If desired serve with vanilla coconut milk ice cream, fresh fruit, or salted coconut caramel.

Notes

Depending on how sweet you like your baked goods you can add a bit more sweetener to suit your tastes.
