Gluten Free Smores Cups
When you just want a good old fashioned s'mores treat without the campfire and mess! These gluten free s'mores cups are quick, easy to make, and delicious!

Melt the chocolate in a microwave safe bowl in 15-second increments until melted. Stirring often.
If it's too thick add in a bit of coconut oil to thin out. Place about a teaspoon and a half of chocolate into the bottom of 18 mini muffin cups.
Divide the crushed graham crackers between them then top with remaining chocolate.
Push a marshmallow into the tops then sprinkle each cup with a bit of flaky sea salt. Refrigerate until set, about 10 minutes.
If desired you can use a kitchen torch or lighter to toast the marshmallows.
