Easy Pumpkin Soup

Ingredients
  

  • 1 tablespoon butter
  • 1 can of pureed pumpkin
  • ½ teaspoon garlic powder
  • salt to taste
  • 1 - ½ cup chicken broth
  • ¾ cup full-fat coconut milk
  • ½ tablespoon Worcestershire sauce

Instructions
 

  • In a 3qt (or more) saucepan, brown the butter (heat it until it starts to carmelize and brown)
  • Add the pumpkin, broth, garlic, and salt
  • Add the coconut milk and Worcestershire sauce
  • Blend with an immersion blender.
  • Bring to a low boil then serve.
  • Optional: add an herb or green onion garnish.
