Ingredients
  

  • 1 medium turkey about 8 lbs
  • 5 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons salt
  • 1/2 teaspoon pepper
  • 2 teaspoons granulated garlic
  • 1 teaspoon coriander
  • 2 teaspoons dried herbs thyme, oregano, basil
  • 1 apple sliced
  • 1 lemon sliced
  • Fresh sprigs of thyme and rosemary

Instructions
 

  • Pre-heat the oven to 350 degrees F.
  • In a bowl, combine olive oil, Dijon mustard, salt, pepper, granulated garlic, coriander, and dried herbs until well mixed.
  • Place the turkey in a baking dish and brush it thoroughly with the marinade, covering both the inside and outside. For enhanced flavor, you can let the turkey marinate covered in the refrigerator for a few hours or overnight.
  • Stuff the cavity of the turkey with apple and lemon slices. Tie the turkey legs together with kitchen twine and place fresh thyme and rosemary in the baking dish.
  • Cover the turkey with foil and roast it in the preheated oven for 2.5 hours.
  • Remove the foil, increase the oven temperature to 400 degrees F, and continue roasting for another 30 minutes to crisp the skin.
  • After roasting, let the turkey rest covered with foil for 30 minutes before serving to allow the juices to redistribute throughout the meat.
