large sweet potatoes cut in half lengthwise

butter softened

teaspoons
minced garlic

honey + additional for garnish

Salt and pepper to taste

feta cheese crumbled

chopped walnuts

tablespoons
chopped fresh parsley
Instructions
Preheat the oven to 425 degrees.
Score the cut side of each sweet potato half with a sharp knife.
In a mixing bowl, blend together the butter, garlic, honey and salt and pepper to taste.
Spread the mixture over the sweet potatoes and place them into a 9x13 baking dish.
Cover with tin foil and bake for 40 minutes, or until the sweet potatoes are tender.
Drizzle with additional honey, and sprinkle with feta, walnuts and parsley before serving.
