  • Preheat your mini waffle maker.
  • Add the mozzarella and cream cheeses to a microwave safe bowl, and heat at 30 second intervals until completely melted and well blended into a cheese dough.
  • Add the almond flour and sweetener to the cheese mixture, and knead with your hands until well combined.
  • Place the dough into a mixing bowl, and add in the heavy whipping cream, egg and vanilla extract. Blend on high until a smooth batter has formed.
  • Separate the batter into 3 equal portions. Leave one portion as it is, add the mashed strawberries to the second portion, and add the cocoa powder to the third portion.
  • Take turns cooking the vanilla, strawberry and chocolate batters in the mini waffle maker until you have three chaffles made.
  • Top the chaffle with sugar free whipped cream and chocolate sauce before serving. You can also add some additional mashed strawberries to the top if desired.
