Preheat your mini waffle maker.
Add the mozzarella and cream cheeses to a microwave safe bowl, and heat at 30 second intervals until completely melted and well blended into a cheese dough.
Add the almond flour and sweetener to the cheese mixture, and knead with your hands until well combined.
Place the dough into a mixing bowl, and add in the heavy whipping cream, egg and vanilla extract. Blend on high until a smooth batter has formed.
Separate the batter into 3 equal portions. Leave one portion as it is, add the mashed strawberries to the second portion, and add the cocoa powder to the third portion.
Take turns cooking the vanilla, strawberry and chocolate batters in the mini waffle maker until you have three chaffles made.
Top the chaffle with sugar free whipped cream and chocolate sauce before serving. You can also add some additional mashed strawberries to the top if desired.
