Ingredients

almond flour

low carb granular sweetener

teaspoon
baking powder

teaspoon
Himalayan Sea Salt

butter
softened but still cool
1
egg
1
tablespoon
key lime juice
freshly squeezed
1
teaspoon
key lime zest
8
drops liquid stevia
Frosting
1/4
cup
powdered low carb sweetener
1 1/2
teaspoons
key lime juice
1-2
teaspoons
unsweetened almond milk
Instructions
Preheat oven to 350 degrees and prepare a baking sheet with your favorite oil (I use coconut oil).
In a medium bowl, add almond flour, monkfruit, baking powder, salt and butter. Beat the mixture until combined.
Add remaining ingredients and beat until nicely mixed.
If the dough is too sticky, you can refrigerate it for 5-10 minutes.
Roll smaller 1-1.5 inch balls and place on the baking sheet. Slightly press balls down to make the tops flat.
Bake for 14 minutes or until done.
Set aside to let cool
Frosting
In a small bowl, mix monkfruit and lime juice. Start with 1 teaspoon of almond milk and slowly add more until you get the right consistency.
Frost cooled cookies and top with lime zest if desired!
