Add the almond flour, butter, creamy cheese, vanilla, Swerve and baking powder to a mixing bowl, and blend until a smooth dough forms.
Chill the dough for 30 minutes.
Preheat the oven to 350 degrees.
Roll the dough out between two pieces of parchment paper until it is roughly the thickness you would like your cookies to be, they will not rise much.
Cut out circles of dough with a cookie cutter.
Place the cookies onto a parchment lined baking sheet.
Bake for 12 minutes, or until lightly browned.
Let cool completely.
Melt the white chocolate chips in a microwave safe bowl until smooth.
Separate the white chocolate into two small bowls.
Place a bit of red food coloring into one of the bowl, and stir to create a pink color.
Dip ½ of each cookie into either the white or pink chocolate coating.
Place the dipped cookies back onto the parchment lined baking sheet, and add sprinkles.
Chill the cookies until the chocolate coating hardens, and then serve.
