Keto Valentine's Sugar Cookies

Ingredients
  

  • 1 ½ cup almond flour
  • 4 tablespoons butter softened
  • 2 tablespoons cream cheese softened
  • 1 teaspoon vanilla extract
  • cup low carb powdered sugar substitute
  • ½ teaspoons baking powder
  • 1 cup keto white chocolate chips
  • Red food coloring
  • Sugar free sprinkles

Instructions
 

  • Add the almond flour, butter, creamy cheese, vanilla, Swerve and baking powder to a mixing bowl, and blend until a smooth dough forms.
  • Chill the dough for 30 minutes.
  • Preheat the oven to 350 degrees.
  • Roll the dough out between two pieces of parchment paper until it is roughly the thickness you would like your cookies to be, they will not rise much.
  • Cut out circles of dough with a cookie cutter.
  • Place the cookies onto a parchment lined baking sheet.
  • Bake for 12 minutes, or until lightly browned.
  • Let cool completely.
  • Melt the white chocolate chips in a microwave safe bowl until smooth.
  • Separate the white chocolate into two small bowls.
  • Place a bit of red food coloring into one of the bowl, and stir to create a pink color.
  • Dip ½ of each cookie into either the white or pink chocolate coating.
  • Place the dipped cookies back onto the parchment lined baking sheet, and add sprinkles.
  • Chill the cookies until the chocolate coating hardens, and then serve.
