  • Add the almond flour, coconut flour, xanthan gum, salt, and baking powder to a mixing bowl. Stir to combine.
  • Add the egg, water, and apple cider vinegar to the mixing bowl with the dry ingredients.
  • Beat until the ingredients are well combined and form a dry dough.
  • Separate the dough into 6 even portions.
  • Spray two pieces of parchment paper with cooking spray, then roll each portion of dough out between the paper until very thin.
  • Use a bowl to cut each piece of dough into a small circle, about 4-5 inches across.
  • One at a time, place the tortillas in a skillet over medium heat. Cook for 1-2 minutes on each side until lightly browned but still pliable.
