  • Add almond flour, 1 cup of shredded coconut, almond butter, maple syrup, and vanilla extract to a medium bowl. Mix well. It will be a little bit of an effort to get it mixed properly. I used my hands and it went pretty quick!
  • Scoop 1 tablespoon of dough using a cookie scoop for even results. Roll into 10-14 balls (depending on what size balls you make).
  • Add the remaining 1/3 cup of coconut to a small bowl.
  • Roll each ball in coconut pressing gently to make the coconut stick to the outer edge.
