Instructions
Preheat the oven to 350 degrees.
Place all of the ingredients for the cookies into a mixing bowl and beat on high until well combined.
Form the dough into small balls and flatten slightly with the palm of your hand.
Place the cookies onto a parchment or silicone mat lined baking sheet and bake for 8-10 minutes until browned around the edges and cooked through.
Let the cookies cool.
Crumble the cookies into a mixing bowl.
Add the ingredients for the rum balls to the mixing bowl and blend together until a dough has formed.
Form the dough into 30 evenly sized balls.
Place the balls onto a baking sheet and put them in the freezer for an hour to set.
Sprinkle with confectioner's sugar substitute if desired before serving.
