Preheat oven to 375 degrees F and line a baking sheet with parchment paper.
In a medium bowl, combine almond flour, oat fiber, baking powder, garlic powder, onion powder and beaten egg. It will be a wet, crumbly consistency. Set aside.
In a small microwave safe bowl, combine Mozzarella cheese and cream cheese. Heat for 60 seconds, stir and heat for about 30 more seconds.
Add cheese mixture to egg mixture.
Using your hands (be mindful that it is hot and do not burn your hands), squeeze the dough through your fingers to combine. It will feel like it won't combine, but eventually it will.
Put in the fridge for 10 minutes to cool.
Separate the dough into 6 even chunks and roll into nice balls.
Place on a baking sheet.
Bake for 8 minutes. Increase temperature to 400 and bake for 6-8 more minutes until lightly golden brown.
