Instructions
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
Add all the cookie ingredients to a mixing bowl.
Beat on high until well combined into a dough.
Place the dough between two pieces of parchment paper. Roll it out until the dough is about ¼-½ inch thick.
Use a round cookie cutter to cut out 16 circles from the dough. Place on the prepared baking sheet.
Bake the cookies for 12-15 minutes until cooked through and firm to the touch. Set aside and allow to cool to room temperature.
Add the filling ingredients to a mixing bowl. Blend until smooth and creamy.
Spread a layer of filling on one cookie, then place another cookie on top of the filling to form a sandwich.
Repeat until you have 8 cookie sandwiches.
