Keto Mayonnaise

Ingredients
  

  • 1 large egg
  • 1 tablespoon dijon mustard
  • 1 cup sunflower oil or olive oil
  • 1 tablespoon lemon juice
  • ΒΌ teaspoon salt

Instructions
 

  • In a tall container that is suitable for use with an immersion blender, add the egg, mustard, lemon juice, and salt.
  • Pulse the blender while very slowly adding the oil. Be sure to lift the blender several times to let air inside the mixture.
  • Continue to blend for a few minutes as the mixture thickens. If the mayonnaise is still runny, very slowly add more oil and continue to blend.
