  • Place the mozzarella cheese and cream cheese into a microwave safe bowl. Heat the cheeses at 30 second intervals until well combined and completely melted.
  • Add the cheese dough to a mixing bowl with the almond flour, baking powder, brown sugar substitute and cinnamon. Knead the mixture with your hands until well incorporated.
  • Beat the egg and vanilla extract into the dough on high until well combined.
  • Chill the dough in the freezer for 30 minutes.
  • Roll the chilled dough out into a rectangular shape about ¼ of an inch thick between two pieces of parchment paper. Trim the edges with a pizza cutter or sharp knife until you have an even rectangular shape.
  • Cut the large dough rectangle into 8 small rectangles, and pierce each one with the tines of a fork a few times to prevent bubbles from forming when baked.
  • Bake 15-20 minutes until browned and cooked through.
