Place the mozzarella cheese and cream cheese into a microwave safe bowl. Heat the cheeses at 30 second intervals until well combined and completely melted.
Add the cheese dough to a mixing bowl with the almond flour, baking powder, brown sugar substitute and cinnamon. Knead the mixture with your hands until well incorporated.
Beat the egg and vanilla extract into the dough on high until well combined.
Chill the dough in the freezer for 30 minutes.
Roll the chilled dough out into a rectangular shape about ¼ of an inch thick between two pieces of parchment paper. Trim the edges with a pizza cutter or sharp knife until you have an even rectangular shape.
Cut the large dough rectangle into 8 small rectangles, and pierce each one with the tines of a fork a few times to prevent bubbles from forming when baked.
Bake 15-20 minutes until browned and cooked through.
