Keto Egg Roll in a Bowl

Ingredients
  

  • 1/2 tablespoon olive oil
  • 1 lb ground pork
  • 1/4 of a small purple onion roughly chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1 14 ounce pack coleslaw with carrots
  • 2 tablespoons chicken broth
  • 1.5 tablespoon "No Soy" sauce or coconut aminos divided
  • sriracha sauce is to taste

Instructions
 

  • Add olive oil to large pan over medium heat.
  • Add ground pork and cook thoroughly. Break up any large pieces.
  • Push the meat to one side of the pan and add the purple onion, garlic powder and ground ginger. Mix spices with onion.
  • Saute just until onion is soft, about 3 minutes.
  • Mix onion mixture with meat mixture.
  • Add half of the coconut aminos and Sriracha to taste. Mix well.
  • Add the coleslaw to the pan, drizzle the chicken broth over it then the remaining coconut aminos sauce. Add more Sriracha as desired.
  • Saute until the coleslaw is completely soft, usually about 10 minutes. Add additional coconut aminos and/or Sriracha to taste.
