Keto Drop Biscuits with Cheddar and Chives

Biscuits 2 1/2 cups almond flour 1 teaspoon xanthan gum 1 teaspoon sea salt 1 teaspoon garlic powder 1/2 teaspoon baking soda 1 1/2 cups shredded cheddar cheese 2 tablespoons fresh chives optional 2 eggs beaten 1/4 cup cold butter unsalted and cut into chunks Glaze 2 tablespoons butter unsalted 1/2 teaspoon garlic powder pinch salt
Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
In a large bowl, add almond flour, xanthan gum, sea salt, garlic powder and baking soda. Combine well.
To the large bowl, add cheddar cheese, chives, and eggs. Mix well. A wooden spatula or your hands work best.
Add in the cold butter chunks and use your hands to combine. Trust me, its the best way!
Divide into 12 balls and place on the prepared baking sheet.
Flatten the dough just a bit then bake for 17 minutes.
Meanwhile, add the glaze ingredients to a small pot and melt over medium-high heat. Set aside
Remove biscuits from the oven, drizzle with the glaze and bake for 5 more minutes or until lightly golden brown.
