Keto Drop Biscuits with Cheddar and Chives

Ingredients
  

Biscuits

  • 2 1/2 cups almond flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon baking soda
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons fresh chives optional
  • 2 eggs beaten
  • 1/4 cup cold butter unsalted and cut into chunks

Glaze

  • 2 tablespoons butter unsalted
  • 1/2 teaspoon garlic powder
  • pinch salt

Instructions
 

  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  • In a large bowl, add almond flour, xanthan gum, sea salt, garlic powder and baking soda. Combine well.
  • To the large bowl, add cheddar cheese, chives, and eggs. Mix well. A wooden spatula or your hands work best.
  • Add in the cold butter chunks and use your hands to combine. Trust me, its the best way!
  • Divide into 12 balls and place on the prepared baking sheet.
  • Flatten the dough just a bit then bake for 17 minutes.
  • Meanwhile, add the glaze ingredients to a small pot and melt over medium-high heat. Set aside
  • Remove biscuits from the oven, drizzle with the glaze and bake for 5 more minutes or until lightly golden brown.
