Cookies

Icing

  • 4 tablespoons butter unsalted and softened
  • ¼ cup low carb powdered sugar substitute
  • ½ teaspoon vanilla extract
  • 1 tablespoon heavy whipping cream
  • Food coloring of choice optional
  • Keto sprinkles optional

Instructions
 

  • Combine all of the ingredients for the cookies in a mixing bowl.
  • Beat on high until completely combined into a dough.
  • Wrap the dough tightly in plastic wrap and place in the refrigerator for several hours to chill.
  • Preheat the oven to 350 degrees.
  • Place the chilled dough between two pieces of parchment paper or silicone mats and roll out to about 1/4 an inch thick.
  • Use your cookie cutter of choice to cut shapes from the dough.
  • Bake for 8-12 minutes until the cookies are lightly brown around the edges, then remove from the oven and let the cookies cool completely. Starting looking at them around 8 minutes and monitor every minute until done.
  • Combine the ingredients for the icing in a mixing bowl. Beat on high until smooth and creamy.
  • Add food coloring if desired and mix well.
  • Decorate the cookies with your icing. You can also add keto friendly sprinkles.
