Combine all of the ingredients for the cookies in a mixing bowl.
Beat on high until completely combined into a dough.
Wrap the dough tightly in plastic wrap and place in the refrigerator for several hours to chill.
Preheat the oven to 350 degrees.
Place the chilled dough between two pieces of parchment paper or silicone mats and roll out to about 1/4 an inch thick.
Use your cookie cutter of choice to cut shapes from the dough.
Bake for 8-12 minutes until the cookies are lightly brown around the edges, then remove from the oven and let the cookies cool completely. Starting looking at them around 8 minutes and monitor every minute until done.
Combine the ingredients for the icing in a mixing bowl. Beat on high until smooth and creamy.
Add food coloring if desired and mix well.
Decorate the cookies with your icing. You can also add keto friendly sprinkles.
