Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 3 teaspoons curry powder
  • 2 teaspoon minced garlic
  • 1 teaspoon paprika
  • ½ teaspoon ground ginger
  • Pinch of cinnamon
  • Salt to taste if desired

Instructions
 

  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  • Add all ingredients for the curry chicken to a mixing bowl. Mix well.
  • Toss the chicken in the mixture to coat in the spice well.
  • Place the chicken on the prepared baking sheet and bake for 25-30 minutes until cooked thoroughly.
