Preheat oven to 350 degrees F and line baking sheet with parchment paper.
Add almond flour, coconut flour, cocoa, sweetener, baking powder, baking soda and xanthan gum to a medium bowl. Mix well with a spatula.
Add melted butter, egg, vanilla and chocolate chips (2-4 tablespoons depending on your preference). Finish mixing.
You can optionally chill the dough for 30 minutes. The more you chill it, the more crinkles you'll get. But if you are pressed for time, you can skip it.
Make 15-18 1-inch balls and place on cookie sheet.
Take each ball and roll it in your granular sweetener and then roll it in your powdered sweetener. Place back on the baking sheet.
Bake for 7 minutes. Lightly press down with a fork to flatten them slightly and begin to create the cracks.
Bake for 5 more minutes. Let cool for 3-4 minutes.
Now, there's a chance your sweetener has partially melted into your cookie, so you'll want to dip and roll again in powdered sweetener. If they aren't crinkled to your satisfaction, gently press the sides in to create some more cracks.
