Add the mozzarella and cream cheese to a microwave safe bowl.
Heat in 30 second intervals, stirring in between, until completely melted and combined.
In a mixing bowl, add the almond flour, baking powder, and an egg.
Place the cheese dough in the mixing bowl with the dry ingredients. Beat on high until well combined.
Put the dough into the freezer to chill for 30 minutes.
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a silicone mat.
Wet your hands slightly, then form the fathead dough into 10 evenly sized balls. Flatten with your hands into small circles, then place on the prepared baking sheet.
Bake for 10-15 minutes until lightly browned and cooked through. Set aside to cool.
Add the ingredients for the chicken salad to a mixing bowl and stir until well combined.
Top the fathead bites with the chicken salad and serve.
