Keto Chicken Paprikash

Ingredients
  

  • 2 pounds chicken thighs and legs bone in and skin on
  • 2 tablespoons butter
  • ½ onion chopped
  • 1 teaspoon minced garlic
  • 1 red bell pepper chopped
  • 2 Roma tomatoes chopped
  • 2 cups chicken broth
  • 3 tablespoons Hungarian paprika
  • ¼ cup heavy whipping cream
  • ½ cup sour cream
  • Salt and pepper to taste

Instructions
 

  • Season the chicken with salt and pepper to taste.
  • Melt the butter in a skillet over medium high heat.
  • Sear the chicken on both sides and then remove them from the skillet and set aside.
  • Add the onions and peppers to the hot skillet and saute until they begin to soften.
  • When the onions are softened, add in the tomatoes and garlic and saute for 1 additional minute.
  • Stir in the paprika and broth and quickly remove the skillet from the heat.
  • Place the chicken back in the skillet and coat with the sauce.
  • Place the skillet back on the stove over medium low heat. Bring to a boil, cover and simmer for 40 minutes.
  • Remove the chicken from the skillet again and add in the heavy whipping cream and sour cream. Mix until well combined.
  • Simmer until the sauce thickens.
  • Return the chicken to the skillet one final time, toss to coat in the sauce, and serve.
