Ingredients
  

  • 5 eggs
  • 2 1/4 cups keto flour
  • 2/3 cup low carb granular sweetener
  • 1 1/2 teaspoons baking powder
  • 3 tablespoons heavy whipping cream
  • 3 tablespoons butter room temperature
  • 2 teaspoons vanilla extract
  • 3/4 cup blueberries

Instructions
 

  • Preheat your oven to 350 degrees F and line a loaf pan with parchment paper.
  • In a medium bowl, add eggs, vanilla, baking powder, and sweetener. Beat with hand mixer until frothy.
  • Add the butter and cream until well incorporated.
  • Once well combined, add in homemade keto flour. Continue mixing.
  • Fold in the blueberries carefully.
  • Add batter to prepared loaf pan. Cook for 40-50 minutes. Start checking for doneness around 35 minutes.
  • Check with a toothpick to make sure it is cooked through.
  • Let rest for about 15 minutes before slicing.
