Ingredients
  

Frosting

  • 2 ounces cream cheese room temperature
  • 1 tablespoon butter room temperature
  • 2 tablespoons powdered monkfruit
  • 1 tablespoon heavy whipping cream
  • 1/8 teaspoon vanilla extract

Instructions
 

  • Prepare sprinkles according to instructions! They are super simple, but they do take a few hours to dry out, so you can make them the night before if you want!

Frosting

  • Combine all ingredients into small bowl and beat until creamy.
  • There will be enough for 2 cakes, but sometimes things don't turn out when the proportions of ingredients get too small. So you may have leftovers!
  • Set aside.

Cake

  • In a small bowl, combine sprinkles, almond flour, protein, monkfruit, and baking powder. Combine well. NOTE - I added 1 teaspoon each of 4 different colors.
  • To the bowl, add a beaten egg, heavy whipping cream, vanilla extract and almond extract. Beat with a fork and combine well.
  • In your mug or ramekin, melt butter and swirl around the bottom and sides to give it a good coating.
  • Pour batter into prepared mug and microwave for 2 minutes.
  • Flip upside down onto a plate and lift off the mug.
  • Immediately add frosting so it melts. Add a big glob in the middle and just stir around the top so it melts and starts falling down the sides.
  • Add additional sprinkles if desired.
