Instructions
Preheat the oven to 350 degrees.
In a bowl, blend together the peanut butter, egg, vanilla and Swerve until a smooth dough forms.
Mix the chocolate chips into the dough.
Form the dough into 15 even balls, and place onto a parchment lined baking sheet.
Press the balls of dough down in a criss cross pattern using the tines of a fork.
Bake the cookies for 12 minutes.
