Melt the bacon grease in a skillet over medium high heat.
Season the chicken with the cajun seasoning.
Sear the chicken evenly on both sides in the skillet until browned and cooked through.
Remove the chicken and set aside.
Pour the grease out of the skillet.
Reduce the heat to medium, and melt the butter in the skillet.
Pour in the heavy whipping cream, and simmer until the sauce has thickened.
Mix in the parmesan cheese until well combined.
Return the chicken to the skillet, and toss to coat in the sauce.
Garnish with bacon pieces before serving.
