Ingredients
  

  • 1 pound boneless skinless chicken breasts cut into small pieces
  • ½ red bell pepper finely chopped
  • ½ onion finely chopped
  • 2 teaspoons minced garlic
  • 1 ½ teaspoons Cajun seasoning
  • 1 ½ cups almond flour
  • 2 large eggs
  • 3 teaspoons baking powder
  • 6 tablespoons Seltzer water
  • Salt and pepper to taste
  • Oil for frying

Instructions
 

  • In a large mixing bowl, add the almond flour, red bell pepper, onion, garlic, Cajun seasoning, eggs, baking powder, seltzer water, chicken, and salt and pepper to taste. Mix well.
  • Add several inches of oil to a skillet or pot and heat over medium high heat.
  • Form the chicken mixture into small patties and carefully drop into the heated oil.
  • Fry evenly on both sides until golden brown and cooked through completely.
  • Remove and drain the fritters on a paper towel lined plate.
  • Serve with your favorite sauces for dipping.
