In a large mixing bowl, add the almond flour, red bell pepper, onion, garlic, Cajun seasoning, eggs, baking powder, seltzer water, chicken, and salt and pepper to taste. Mix well.
Add several inches of oil to a skillet or pot and heat over medium high heat.
Form the chicken mixture into small patties and carefully drop into the heated oil.
Fry evenly on both sides until golden brown and cooked through completely.
Remove and drain the fritters on a paper towel lined plate.
