Ingredients
  

For the meatballs

  • 2 pounds ground chicken or turkey
  • 1 cup crushed pork rind crumbs
  • 2 teaspoons minced garlic
  • 2 teaspoons ginger paste
  • Salt and pepper to taste

For the sauce

  • 4 tablespoons butter divided
  • ½ onion chopped
  • 2 teaspoons minced garlic
  • 2 teaspoons ginger paste
  • 1 tablespoon curry powder
  • 1 ½ tablespoons Garam Masala
  • 2 tablespoons tomato paste
  • 1 can coconut milk
  • Cayenne pepper and salt to taste

Instructions
 

  • Preheat the oven to 400 degrees and grease a 9x13 baking dish
  • Add the ingredients for the meatballs to a mixing bowl and mix until well combined.
  • Form evenly sized meatballs and place into the baking dish.
  • Bake for 30-35 minutes until browned and cooked through.
  • While the meatballs are baking, add 2 tablespoons of the butter to a pot over medium heat.
  • Stir in the onions and saute until softened.
  • Add in the garlic, ginger paste, curry powder, Garam Masala and tomato paste. Combine well and saute for 30 seconds.
  • Add coconut milk, cayenne pepper, and salt to taste.
  • Simmer until thickened and allow to cool for 5 minutes before pouring over the meatballs to serve.
