Ingredients

  • 2 ½ - 3 pound pork shoulder
  • ½ cup low carb brown sugar substitute
  • 2 teaspoons paprika
  • 2 teaspoons cayenne
  • 2 teaspoons garlic powder
  • 2 teaspoons oregano
  • 2 teaspoons onion powder
  • 1 teaspoon chili powder
  • 1 teaspoons cumin
  • Salt and pepper to taste
  • 4 tablespoons olive oil divided

Instructions

  • In a mixing bowl, combine all the ingredients except the pork shoulder and olive oil.
  • Drizzle the pork shoulder in 2 tablespoons of olive oil and thoroughly rub with the brown sugar mixture.
  • In a medium skillet, heat the remaining olive oil over medium high heat.
  • Sear the pork on all sides in the heated skillet, do not leave it in place too long because the sugar mixture could burn.
  • Place a small amount of water in a crockpot and move the pork to the crockpot.
  • Cook for 30 minutes on high.
  • Reduce the heat to low and cook for an additional 6 hours.
  • Slice or shred and serve!
