Keto Red Wine Brussels Sprouts

I’m going to admit that when hubby told me he was going to experiment with a red wine sauce and VEGGIES, I was a little skeptical.

I hated Brussels Sprouts growing up.  Like with a PASSION.  My taste buds chilled out a bit when I grew up and they became my favorite!

This recipe will NOT disappoint even the most seasoned Brussels Sprouts lover. 

And even if you aren’t a true fan – give this red wine keto Brussels Sprouts dish a try because you can hardly taste the veggies – even though they DO taste amazing!

Red Wine Keto Brussels Sprouts

Red Wine Keto Brussels Sprouts

Ingredients

Cream Sauce

  • 1/4 cup red wine vinegar
  • 1/2 cup red cooking wine (not sweet)
  • 7 tablespoons butter
  • 1/4 teaspoon salt
  • 1 teaspoon Italian Seasoning
  • 4 teaspoons fresh ginger, minced
  • 1/4 cup heavy whipping cream

Brussels Sprouts

  • 1/4 cup water
  • 2 cups Brussels Sprouts, halved
  • 4 strips bacon, cooked and chopped
  • 1/3 cup coconut oil

Instructions

Cream Sauce

  1. Combine all cream sauce ingredients (EXCEPT heavy whipping cream) in a small saucepan. Heat over low heat, covered, for 20 minutes. Stir often.
  2. Add heavy whipping cream and cook for 10 additional minutes.

Brussels Sprouts

  1. Combine all Brussels sprouts ingredients into wide saucepan with lid. Heat over high heat for 7 minutes, stirring occasionally.
  2. Set aside until cream sauce is done.
  3. Plate Brussels Sprouts and pour sauce over to serve.
