Peppered Zucchini

Sometimes we just want an easy side dish that is NOT cauliflower?  Am I right?  This is where peppered zucchini come into play.  Especially when you pair it with the peanut drumsticks because the oven temp and timing work out perfect!

Let’s just get right down to it.


  • 4 green zucchini
  • 2 yellow zucchini (are the yellow ones still called zucchini???)
  • 1 Tablespoon olive oil
  • Salt and Pepper to taste

The fun part:

Preheat oven to 400 degrees.

Slice the zucchini and put into a bowl.  Toss with olive oil.

Line a baking sheet with aluminum foil and spread zucchini evenly.  Salt and Pepper to taste.

You could even put them on the baking sheet first and then us a brush to paint the olive oil on.  I had just used it on raw chicken, so I just tossed it in a bowl!

Bake in the oven for 15-20 minutes (depending on how thick your slices are).  Mix them up halfway through to get even cooking.

Works great as a side dish to almost any entree!
