Keto Meatball Casserole

I don’t know about you, but I really love casseroles. ANY kind of casserole. This keto meatball casserole is such a tasty recipe that it is one of the most popular dinners in my house.

I used to make meatballs at least once a week and then provide a variety of sauces for the kiddos. They would eat them over rice and I would cut them up and eat them on a salad. But then I decided that I wanted a full meal with the meatballs without having to add in other items.

One of the many great things about casseroles is that cleanup is a BREEZE! If you clean as you go, by the time dinner is ready, you only have one dish to clean. I call that a win!

You can totally use premade meatballs for this low carb meatball casserole. One thing to watch out for is that most premade meatballs have gluten in them. This means that they are obviously not gluten free AND their carb count is going to be higher.

I’ve found some delicious premade meatballs, however, but they are not always easy to find. Just be mindful of ingredients and carbohydrate count and you can make and even easier keto meatballs casserole!

Keto Meatball Casserole Substitutions

There are a lot of small substitutions you can make in this casserole recipe. I’ll just mention a few of the larger ones.

First, you can substitute the turkey for ground beef or even ground pork if you want. Any of those taste amazing. Sometimes I’ll even combine two of those meats and it is even better!

Another substitution you can make is instead of buying a low carb marinara sauce, you can make your own using this keto marinara sauce recipe.

If you have a top that will fit your casserole dish, then just pop that on and stick it in the fridge. If not, then simply transfer the remaining casserole to your favorite airtight storage container and put in the fridge.

Leftovers will be good for 3-4 days!

Can You Freeze this Keto Meatball Casserole?

You definitely can! This is a great recipe for meal prep. You can make a big batch or two, let it cool down, and then package it properly to avoid freezer burn, and place it in the freezer. I like to make sure I use it within 3-4 months.
