Lava cake is cooked to the correct doneness, with the outside of the cake being done with the center of the cake “aka, the lava” being melty, gooey, and wiggly.
The cake is served warm so that the center is still liquid and acts as lava as it escapes the center of the cake.

Despite the fact that it seems like lava cake would require a lot of work, they really don’t require much in terms of ingredients or supplies. The following is all that is needed to make this decadent dessert:

How to Make Keto Lava Cake
Preheat the oven to 350 degrees.
Add the butter and chocolate chips to a microwave safe bowl. Heat for 30 second intervals until melted and well combined.

Mix the baking powder, almond flour, Swerve, vanilla, eggs and cocoa powder into the chocolate mixture until smooth and creamy.

Spray two large ramekins well with baking spray. Separate the batter evenly into the two ramekins. Bake for 10-12 minutes, or until the sides are firm, but the mixture is still a bit jiggly in the center.
If you want it more runny, cook a bit less, but make sure the cake is done!

Let cool for 10 minutes, and then carefully turn out onto plates to serve.
Can You Substitute Coconut Flour for Almond Flour in this Keto Lava Cake Recipe?
Many times you can adjust ingredients in keto recipes without issues. Unfortunately, this is not one of those recipes. The almond flour will give the recipe a more cake like texture and coconut flour just really doesn’t work the same.

If you overcook or heat this lava cake too hot, the consistency of this cake can change consistency. The chocolate (especially in the center) can get lumpy. It also doesn’t take much time for it to start tasting burned.
Make Sure Your Ramekins are Completely Dry
If you have recently washed your ramekins, double check to make sure there are no drops of water at all. This can create lumps in the chocolate and ruin the consistency of your cake.

Yes, you can freeze this keto lava cake! The key to freezing with the best success is to remove from ramekins and place them on a lined baking sheet in the freezer. Freeze until solid. Wrap tightly and store in an airtight container in the freezer for up to 3 months.
Reheating Tips
For best, authentic lava cake results, preheat your oven to 350 degrees F and bake your lava cake for approximately 10 minutes until warm.
I recommend using the oven to reheat your cake, but you can reheat them in the microwave. Place the cake on a plate covered with a damp paper towel and set the timer for 30-40 seconds.
