How to Make Keto Curry Chicken

Preheat oven to 350 degrees F and line a baking sheet with parchment paper. Then add all ingredients for the curry chicken to a mixing bowl and mix well.

What Can I Replace Rice With on Keto for Curry?

If you are used to eating rice with your curry, this is a change that you need to make, but that’s okay! There are some really great substitutions for rice that won’t affect your blood sugar. Here are some of my favorite low carb options for serving with curry:

Cauliflower Rice

Cauliflower rice is a great option because it is mild and does a great job of absorbing the flavors of the curry, plus, if you cook it correctly, you’ll find that it is a very similar texture to that of regular rice.

Roasted Vegetables

Is there anything main dish that roasted veggies don’t pair well with? These are always a great choice for low carb dieters.

A great mix of vegetables to roast to serve with your curry includes cauliflower, broccoli, zucchini. Toss these veggies in oil, top with some sea salt (and cayenne pepper if you like a bit of spice) and roast for 15-20 minutes at 425 degrees.

You can toss the veggies into your curry dish or you can serve them alongside your curry dish. You choose!

Zucchini Noodles

Zucchini noodles are a great side dish for curry. They are mild in flavor so they will pair well with the curry without overpowering it.

Is Keto Curry Chicken Good for Weeknight Dinners?

This keto curry is great for busy weeknight dinners because it is very easy to make and it’s finished quickly. Additionally, though, this keto chicken curry is very easy to make in advance and store for meal prep.

You can easily double up on the recipe to make one recipe and save the other for dinner later in the week. If you don’t think you’ll be making it in the next 3 days or so, feel free to store it in the freezer for up to 3 months.

How Long Does it Take to Make This Keto Chicken Curry?

This keto curry takes just 10 minutes to prep and just 25 to 30 minutes to cook. That’s right, at most you are looking at 40 minutes from start to finish. Yet another reason why this is such a great recipe for those busy weeknights.

  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 3 teaspoons curry powder
  • 2 teaspoon minced garlic
  • 1 teaspoon paprika
  • ½ teaspoon ground ginger
  • Pinch of cinnamon
  • Salt to taste if desired
