Keto Cinnamon Roll Bites
We don’t always have time to make a pie or cinnamon rolls or anything else that takes some time and effort.
I had such a great response to my recent keto pumpkin pie fat bombs which are a quick and easy replacement when you don’t have time to make a full keto pumpkin pie, that I thought I’d give keto cinnamon rolls fat bomb replacements a try. And BOOM – these beautiful keto cinnamon roll bites were born!
These really are quite the treat. Rich, creamy, yet they hold their shape and full of sweet flavor that bursts with bacon as well!
These work really well as a quick keto treat. I like to make a batch and store them in the fridge and just have one a day. Ok, who am I kidding, maybe 2 a day. That assumes that my kids and husband don’t get ahold of them first, though, otherwise they will be gone on Day 1.
How to Make Keto Cinnamon Roll Bites
Lightly grease a baking sheet or smooth cutting board.
In a medium bowl, add cream cheese, butter, and vanilla extract. Beat with hand mixer until light and fluffy.
Add bacon, cinnamon, and brown granular sweetener to a food processor or blender. Pulse until it is a fine crumble.
Spread out cream cheese mixture onto prepared baking sheet so it is about 8×10 or so.
Sprinkle bacon crumble on top of the cream cheese mixture.
Refrigerate for 60 minutes.
Remove from refrigerator and using a sharp knife, cut into 12 equal strips.
Start rolling each strip, using a knife or spatula if needed. Refrigerate longer if they are too sticky to work with. If they are too stiff, then let sit for a few minutes.
Continue rolling each strip until you have a dozen fat bomb cinnamon rolls.
Serve immediately or store in the fridge or freezer in a covered container.
Do These Having The Consistency as a Cinnamon Roll
They most definitely do not! They do not have a dough base, but instead have a cream cheese base. So, your teeth will sink right into them vs having to chew them.
And while you could certainly enjoy these for breakfast, they are definitely a keto dessert rather than a keto breakfast.
How to Store Keto Cinnamon Roll Fat Bombs
Carefully! Definitely keep these keto treats COLD! Don’t let them sit out for too long. Keep them cold and in the fridge in an airtight container!
Can I Freeze These?
You can definitely freeze these and they thaw beautifully.
If you are only going to freeze them for a short time, then freeze as is. If you are going to freeze for a longer time, make sure they have airtight packaging.
