One of my favorite things to do is to make different kinds of keto breads such as keto banana bread, keto white bread and keto pumpkin bread.

Keto blueberry bread has been on my list for quite some time. I was hoping to use fresh blueberries from my garden but I did something wrong this year and I didn’t get much. It happens. No worries though, I just had to pick some up at the store.

Be prepared for this bread to be devoured the moment it is removed from the oven. It is moist, sweet, holds its shape and oh so blueberry-ish!

How to Make Keto Blueberry Bread

Preheat your oven to 350 degrees F and line a loaf pan with parchment paper.

In a medium bowl, add eggs, vanilla, baking powder, and sweetener. Beat with hand mixer until frothy.

Add the butter and cream until well incorporated.

Once well combined, add in the homemade keto flour. Continue mixing.

Fold in the blueberries carefully.

Add batter to prepared loaf pan. Cook for 40-50 minutes. Start checking for doneness around 35 minutes.

Check with a toothpick to make sure it is cooked through. Let rest for about 15 minutes before slicing.

Are Blueberries Keto Friendly?

They are. Many people think they are the MOST keto friendly berry, but I am here to say that is actually inaccurate. But they are still keto friendly. What one needs to consider is portion size.

Now, if you want to have a full cup of blueberries then you might be pushing it. But 1/4 of a cup which is a good handful size, well that is only 5 carbs. Not bad at all for a sweet, healthy fruit snack.

Could I Make Keto Blueberry Muffins?

I am sure you could. I have not tried it with this recipe yet, but I do plan to! The cooking time would need to be adjusted, but I do imagine this recipe could easily be translated into delicious muffins.

How to Store Keto Blueberry Bread?

It is best to store baked goods such as this keto blueberry bread in an airtight container in the refrigerator. You can leave it out on the counter for a short time while people are enjoying it, but once everyone is done, make sure to stick it in the fridge to keep it cold.

What Topping Are Good With Keto Blueberry Bread?

I like good old fashioned butter. I like the butter to be super soft, either that or to put cold butter onto warm bread. Either way is lovely.

Other toppings could be keto blueberry jam! If you are a blueberry lover, then this might be perfect for you!
