I drastically prefer how I feel without sugar in my diet, believe me. But I’ll admit that I still miss some of the classics I used to enjoy. So rather than feel deprived, I like to try to recreate Keto versions of my old favorites.

Let me tell you right now: these Keto almond joy bites are not only delicious, I think they’re BETTER than the high-carb, high-sugar, store-bought version! They taste so much fresher, and the flavor combination is out of this world.

After all, how can you go wrong with flaky coconut and a crunchy almond encased in rich, delicious chocolate? 

This simple recipe makes 12 Keto copycat almond joy bites, and each one has about 150 calories, 4 grams of carbohydrates, and 2 grams of fiber. That’s only 2 net carbs per bite!

Is Coconut Good For Keto?

YES! ...as long as it’s unsweetened.

Sweetened coconut flakes can have around 7 grams of carbohydrates and 5 grams of sugar in just 2 tablespoons. Definitely not what we’re looking for.

Unsweetened coconut, on the other hand, has around 2 net carbs and only 1 gram of sugar for the same serving size. Much, much better.

Coconut is also packed with healthy fats and antioxidants. So by adding it to your Keto almond joys, you’re actually getting a nice health boost from your dessert! How great is that?

Can You Eat Keto Almond Joy Bites As Fat Bombs?

Absolutely! 

In fact, each bite has about 15 grams of fat with only 2 net carbs. That makes them an excellent option for a fat bomb.

If you’re unfamiliar with the term, a fat bomb is a bite-sized treat that helps you reach your fat macros. They can be sweet or savory, although the sweet variety tends to be more popular. They’re a great Keto-friendly way to satisfy your dessert craving!

How Do You Store Keto Almond Joy Bites?

Because of the chocolate shell, these fat bombs definitely need to be chilled to keep them from melting.

Once they’ve fully set, I recommend storing them in an airtight container or even a gallon bag for easy grabbing. You could store them in the refrigerator, but the chocolate will be more stable for longer if you keep them in the freezer.

Before enjoying, I recommend setting them out at room temperature for a few minutes to let them soften.

How To Make Keto Copycat Almond Joy Bites

Place the coconut flakes in a food processor or blender.

Add the sugar substitute, butter, and two tablespoons of the coconut oil to the food processor or blender, then pulse until the mixture is well-combined. You want the ingredients to form a thick mixture that clumps together.

Form the mixture into 12 evenly-shaped balls, place them on a baking sheet lined with parchment paper, and flatten them slightly with your hand.

Press an almond into the center of each coconut ball, then place the tray in the freezer for one hour so the mixture can set.

When the time is almost up, add the baking chips and remaining coconut oil to a microwave-safe bowl. Heat the mixture for 30 seconds at a time, stirring at each interval, until the chocolate is melted and the mixture is well-combined. Let the chocolate cool slightly.

Dip each ball of the coconut mixture into the chocolate, ensuring it’s well-coated, then place it back onto a parchment-lined baking sheet.

Return the tray to the freezer for an additional 15 minutes so the almond joy bites can fully set.

  4. Place the tray into the freezer to set for one hour.
  5. Add the baking chips and remaining coconut oil to a bowl that is microwave safe. Heat the mixture for 30 seconds at a time until the chocolate is melted and the mixture is well combined.
  6. Let the chocolate cool slightly.
  7. Dip the fat bomb bites into the chocolate, and place them back onto a parchment lined baking sheet.
  8. Return the tray to the freezer for an additional 15 minutes to set before serving.
