For me, there’s no shortage of Keto dessert recipes to satisfy my sweet tooth. I’m constantly creating new ones! From single-serving treats to pies or cakes that I can share with the whole family, the list is long!
But I always consider it a point of pride when my Keto desserts are gobbled up by non-Ketoers.
Which is why I was so excited when I brought these caramel swirl brownies to a party with my non-Keto friends and they were a HUGE HIT! My friends had no clue the brownies were Keto. They ate every last one and absolutely loved them!
So if you’re looking for a dessert that is sure to please a crowd while also keeping you on track, then let me tell you, this recipe may be the one. These brownies are so moist, so delicious, and pack the unbelievable flavor combination of caramel and chocolate.

Do I Need To Use Gelatin?
No, it is not absolutely necessary that you use gelatin.
I choose to include it in my recipe because it helps give the brownies that soft, chewy texture we know and love. It really steps up the consistency.
Gelatin is also a form of collagen, which is known to have some pretty awesome benefits! Healthier skin, stronger hair and nails, joint pain relief, just to name a few… there are lots of reasons to consider incorporating collagen into your diet.
And what better way than in your rich, fudgy, caramel swirl brownies?
However, if you don’t have gelatin on hand, you can omit it from the recipe. The brownies will still turn out delicious!
How To Store Keto Caramel Swirl Brownies
If you plan to have these caramel swirl brownies in your house for a few days, I would recommend storing them in the fridge in an airtight container. This helps maximize the freshness.
They should stay very fresh for 3-4 days.
Personally, I store them on the counter on a plate, where they disappear in a matter of minutes. But hey, that’s my household with a husband and 5 kids!
How To Make Keto Caramel Swirl Brownies
Preheat the oven to 350 degrees F and grease an 8×8 baking dish.
In a large bowl, add your sweetener, butter, eggs, and vanilla. You can either use a whisk or lightly beat with hand beaters until the ingredients are well combined.
Next, add the almond flour, cocoa powder, gelatin, baking powder, and salt. Continue mixing until well combined.
Add water to thin out the batter a little bit, then continue mixing.
Pour the brownie batter into the prepared baking dish. Then, pour the Keto caramel sauce on top of the batter.
Use a knife to lightly make swirls. You don’t want to make deep grooves in the batter, just light surface swirls. Try to keep the top as even and flat as possible.
The original recipe states to bake for 15-20 minutes. I found that I needed 20-25, but that may be due to the addition of the caramel sauce. So I recommend checking your brownies around the 15-minute mark and then continuing to check on them.
The brownies are done when the edges are firm but the center is still a little jiggly. They will continue to set as they cool.
Remove from the oven and allow to cool completely before cutting into bars.

- 2/3 cup low carb granular sweetener
- 1/2 cup unsalted butter melted
- 3 large eggs room temperature
- 1/2 teaspoon vanilla extract
- 1/2 cup almond flour
- 1/3 cup unsweetened cocoa powder
- 1 tablespoon grass-fed gelatin
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup water
- 1/3-1/2 cup keto caramel sauce
Instructions
- Preheat oven to 350 degrees F and grease 8x8 baking dish.

- Swirl the caramel into the top of the batter. Use a knife to lightly make swirls. Don't make deep grooves in the batter, try to keep as even and flat as possible.

- It is done when the edges are firm but the center is sitll a little giggly.
- Let cool completely before cutting into bars.
