Avocado Tuna “Balls”

I had this great dinner planned for the kids. We were going to have mustard & sage baked chicken, cheesy broccoli and mini potatoes (the potatoes were for them, not me). It was Sunday night after a long weekend and they came upstairs and asked if we could just order a gluten-free pizza. Sigh….
It had been a while, so I agreed. Now was my dilemma time. What was I going to make for my husband and I? We weren’t incredibly hungry so I needed something light but that I could also make with common ingredients that I have on hand.
What’s a mom to do? I picked a lunch item and went with it. Let me tell ya, these hit the spot. My kids even asked for some. Can you guess my answer? NO! Ok, well, I let them split one!
The reason I have “balls” in quotes is because mine did not turn out as balls. They were a little crumbly when I was trying to cook them. I think it was because I didn’t make the ball firm enough. Next time, I will make them a little flatter and make them into mini patties!
- 10 ounces canned drained tuna
- ¼ cup mayonnaise (I use avocado mayo)
- 1 medium avocado
- ¼ cup Parmesan cheese
- 1/3 cup almond flour
- ½ tsp garlic powder
- ¼ tsp onion powder
- Salt to taste (I use Organic Himalayan Pink Salt)
- Pepper to taste
- ½ cup coconut oil
